Abstract
La calidad de las frutas frescas se puede prolongar con el agregado de sustratos clave como lo es el quitosano que posee ciertos beneficios cuando se lo utiliza como recubrimiento para aumentar la conservación de estas. Se analizó el peso, la acidez, el índice de madurez y la capacidad antioxidante de naranjas esprayadas y en naranjas sin esprayar usadas como blanco conservadas a 25 °C y durante un período de 21 días. La formulación a base de quitosano empleada resultó beneficiosa para la conservación de las naranjas.
The quality of fresh fruits can be prolonged with the addition of key substrates, such as chitosan, which has certain benefits when used as a coating to increase their conservation. The weight, acidity, maturity index, and antioxidant capacity of sprayed oranges and unsprayed oranges used as blank stored at 25 °C for a period of 21 days were analyzed. The chitosan-based formulation used was beneficial for the preservation of oranges.
